Breakfast Egg Roll
We enjoy adding variety to our breakfasts every once in a while! :)
  • Servings: 6

Ingredients

  • 4 oz. cream cheese, softened
  • 3/4 C. milk
  • 2 T. Flour
  • 1/4 t. Salt
  • 12 Eggs
  • 3 T. Dijon Mustard
  • 1 1/2 C. shredded cheddar or swiss cheese, divided
  • Sausage, ham, or bacon
  • Veggies

Directions

  1. Line bottom and sides of a greased 15x10 baking pan with parchment paper. Grease paper and set aside.
  2. In a small mixing bowl, beat cream cheese and milk till smooth.
  3. Add flour and salt; mix until combined.
  4. In a large mixing bowl, beat eggs until blended.
  5. Add cream cheese mixture; mix well.
  6. Pour into pan and bake at 350 until puffed and set. (About 20-25 min.)
  7. Spread mustard across and sprinkle with half the cheese and meat and veggies of choice.
  8. Roll up.
  9. Sprinkle top with remaining cheese.
  10. Bake 3-4 min. longer to melt the cheese.
  11. Serve and enjoy!
