Homemade Cottage Cheese

Once you make cottage cheese for the first time you will wonder why you didn't try it earlier... it's so quick and easy!
Ingredients
- 1 gallon raw milk
- 3/4 c. white vinegar
- 1 1/2 tsp. salt
- cream, to desired consistency
Directions
- Skim cream off milk and pour milk into a large pot.
- Place on burner and heat over medium heat until it reaches 190 - no need to stir. This normally takes me about 30-35 minutes, but check for yourself the first time.
- After the milk reaches 190, remove from burner and slowly stir in the 3/4 cup of vinegar while whisking. The cheese should start to curdle almost instantly.
- After it curdles, pour into a strainer or colander and rinse with cold water while stirring.
- Dump cottage cheese into a bowl and break up any large clumps with your fingers.
- Stir in the 1 1/2 tsp. of salt and then add in the cream.
- Enjoy plain or with your favorite fruit topping (A favorite Steiner topping is applesauce!).
