Hard Boiled Egg Casserole

While it probably won't win the beauty contest, this casserole usually comes out on top as one of my favorites at family get togethers!
Give it a try this holiday season and you'll agree with me that it's something to have on the menu year around!

- Servings: 8-10 servings
Ingredients
- 16 eggs, hard-boiled & sliced
- 2 1/2 cups crushed potato chips
- 1-2 pounds of bacon or bacon ends (I like to do plenty of bacon so I did 2 pounds)
- 1/2 cup onions, chopped (opt.)
- 6 Tbsp. flour (I did 5 Tbsp. gluten free flour)
- 6 Tbsp. butter
- 3 cups milk
- 3/4 pound of cheddar or co-jack cheese
Directions
Saute onions (if using) in butter. Add flour, then milk. Stir until thick and bubbly. Add cheese and stir until melted. Layer half of eggs in a greased 9x13 inch pan. Pour half of the sauce over the eggs. Top with half of the potato chips and bacon. Repeat. Bake at 350 for 20 to 30 minutes. May make and refrigerate before baking.
