Southwestern Meatloaf

A delicious new take on your standard meatloaf recipe!
Ingredients
- 1 cup salsa
- 2 eggs
- 2 Tbsp. sriracha (or your favorite kind of hot sauce)
- 1/2 cup grated parmesan
- 2 1/2 tsp. Tony Chachere's Creole Seasoning
- Dime-sized bunch fresh cilantro, chopped (optional)
- 2 lbs. ground beef
- Topping: 1 lg. onion (sliced), 1 Tbsp. butter, 1 cup cheddar cheese
Directions
Whisk all the meatloaf ingredients (except the ground beef and toppings) together. Add the ground beef and mix well (I use my hands for this). Press the meatloaf mixture into a greased 9x13 inch baking pan, then use your hand to make a slight trough around the outside of the meatloaf for the grease to drain off (basically just make sure the meatloaf doesn't go all the way to the sides of the pan).
Saute the sliced onion in the butter until nice and brown then layer on top of the meatloaf mixture and top with the cup of cheddar cheese.
Bake the meatloaf (uncovered) at 350 for 35-45 minutes or until it reaches an internal temperature of 160 degrees.
